Slimming World Slow Cooker Gammon

This recipe was originally published in April 2015 as a Syn Free Slimming World pulled gammon in the oven. It has since been updated in January 2021 with tastier ingredients and photos, but now has syns.

You might think I'm mad eating a gammon in slow cooker salad in Winter, but I'll tell you why I'm still loving them. For the past 6 months, I've ditched low fat for what is considered the healthiest diet in the world.
It's the Mediterranean diet. And additionally, instead of focusing on starchy carbs as a staple, I've been eating leafy green salads or steamed vegetables. (*Some desserts slip through, of course, but that's life).
And it's the lean protein, like this pulled gammon, cooked with a dash of honey and mustard for a little bit of what I like that keeps me going. Besides, oils and herbs taste WAY more interesting, making it WAY more sustainable than low fat.

How to Make Slow Cooker Pulled Gammon

But, in a nutshell, to slow cook gammon before shredding, all I do is:
- When slow cooking gammon, I like to soak it in water overnight to remove any excess salt
- Trim off any visible fat off the gammon as it's not healthy
- Place in the slow cooker or crock pot with everything else and cover
- Cook on high for 5 hours or low for 7-8 hours

Ways to Eat Shredded Gammon
If you have shredded ham, pork or gammon, a few ways you can eat it is:
- Pulled gammon salad bowl with a mustard salad dressing
- Nicoise salad with gammon instead of tuna
- Greek chickpea salad with gammon
- In wholemeal bread buns
- Pulled gammon burritos or fajitas
- Make into a pulled gammon soup with cabbage (also slow cooker)
- Mix with other meats for a leftover meat and potato topped pie
- Mash with avocado to make keto gammon lettuce wraps
- Stir into this leftover gammon curry recipe
- Make pulled gammon dirty fries
- Or create a pulled gammon pizza or even turn them into pizza rolls
- Eat with Slimming World chips

How Do You Make Pulled Gammon Thicker?
Slow cooker pulled gammon and pork tend to be more on the watery side. That's because it's not cooked really high to reduce down.
If you want a slightly thicker consistency, the quickest way is to spoon out 2 tbsp of the honey and mustard sauce into a bowl and stir in 1 tbsp of cornflour.
Mix well until there are no lumps. Then pour back into the slow cooker while stirring and leave to cook for another 10 minutes until thicker. Repeat if you wish.

How Long Does Pulled Gammon Keep?
Once cooked, leave to cool and store in the fridge immediately for around 4-5 days in an airtight container. I always heat up leftover in the microwave until piping hot.
Using a freezer-safe container, I would store it in the freezer for up to 3 months. Then fully defrost before reheating, although we tend to eat ours very quickly.

Pulled Gammon Recipe (Slow Cooker)

- 1 tbsp coconut oil
- 1 kg gammon joint
- 1 onion finely diced
- 1 tsp garlic powder
- 2 tbsp dijon mustard
- 3 tbsp honey
- ½ tbsp harissa paste or chilli powder
- 1 tbsp smoked paprika
- ⅔ cup passata
- ½ cup balsamic vinegar
- ½ tbsp Chipotle paste
- 1 tbsp wholegrain mustard

If you want to, soak the gammon in cold water over night and drain to remove any excess salt.

Trim all the visible fat off the gammon joint and place in the slow cooker.

Add everything else to the slow cooker, cover and cook for 5 hours, set on high or low for 7-8 hours.

Remove the gammon and shred up and return to the pot before and allow to cool for 30 minutes and slightly thicken.

If you prefer to thicken more, leave it on high for an extra hour without the lid. OR, scoop out ¼ of the juice and cool for a few minutes, then stir in 2 tbsp of cornflour and stir into the slow cooker until thicker.
Slimming World Pulled Gammon Adaptations
Note, if you'd like to lower the calories and create a Slimming World pulled gammon, my recommendations are:
- Omit the coconut oil
- Use natural sweetener, which is ½ syn per tbsp as opposed to each level tablespoon of honey is 2.5 syns
- Use tomato puree and chilli, cumin and other spices as opposed to harissa and chipolte paste if preferred
- Opt for mustard powder instead of mustard sauces
